One of the best things about this vegetable is that you can keep it without refrigeration for 3-4 days. The bitter gourd, karela, is commonly consumed in India. It’s the perfect recipe for a busy weeknight because it’s easy and delicious.

Many health benefits are associated with it, including maintaining blood sugar levels (good for diabetics), lowering bad cholesterol, helping in weight loss, boosting the immune system, curing constipation, and purifying the blood, so it is good for skin conditions as well. Ingredients for Bitter Gourd

  • Bitter Gourd – 300 gms  (3 to 4 big size)
  • Salt- 3/4 small spoon (According to taste)
  • Heeng (Asafetida powder) – 1-2 pinch
  • Coriander leaves – 1/2 small spoon
  • Turmeric Powder- 1/2 small spoon
  • Green Chilly- 4 to 5 (Cut into two pieces in length)
  • Oil – 3 tablespoon
  • Amchoor powder- 3/4 small spoon (less than one spoon )
  • Coriander Powder- 1 small spoon
  • Aniseed powder (souf) – 1 small spoon
  • Coriander green leaves

Here is how to make (Karela) bitter gourd

  1. For cooking, use fresh and green-looking bitter gourds. Bitter gourd recipe
  2. Cut the bitter gourd (karela) into thin, round shapes after washing them.
  3. First, heat oil in a pan and mix heeng powder and cumin seeds in it. When cumin seeds have been roasted, add turmeric, coriander, and aniseed powder. Bitter gourd recipe
  4. Now put the karela, green chilly, amchoor powder, and salt into the pan and mix them well with the help of a spatula.
  5. Place the pan on medium heat and cover it with a lid for 2-3 minutes.
  6. Open the lid and cook the Karela again for 2-3 minutes over a high flame once it is tender.
  7. Adjust the seasoning according to taste and add the coriander leaves and the Karela Fry is ready.

You can serve it along with Chapatis, Paranthas, or Dal-Rice or with Chapatis and Paranthas. Bitter gourd recipe
